- Lemon juice - 1 tablespoon

- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Skewers - 4 (soaked in water if wooden)
Steps
- In a large bowl, combine cooked chickpeas, diced red bell pepper, sliced zucchini, red onion wedges, and cherry tomatoes.
- In a small bowl, whisk together olive oil, lemon juice, garlic powder, cumin, paprika, salt, and black pepper. Pour the marinade over the vegetable and chickpea mixture, tossing to coat evenly.
- Cover the bowl and let it marinate for at least 15 minutes to enhance the flavors.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated vegetables and chickpeas onto the skewers, alternating between the different ingredients.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
