  • Lemon juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a large bowl, combine cooked chickpeas, diced red bell pepper, sliced zucchini, red onion wedges, and cherry tomatoes.
  2. In a small bowl, whisk together olive oil, lemon juice, garlic powder, cumin, paprika, salt, and black pepper. Pour the marinade over the vegetable and chickpea mixture, tossing to coat evenly.
  3. Cover the bowl and let it marinate for at least 15 minutes to enhance the flavors.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Thread the marinated vegetables and chickpeas onto the skewers, alternating between the different ingredients.
