Ingredients

  • King oyster mushrooms - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Cherry tomatoes - 200 grams, halved
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 200 milliliters
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Clean the king oyster mushrooms and slice them into bite-sized pieces.
  3. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  4. Add the diced red bell pepper and zucchini to the skillet, cooking for about 5 minutes until they begin to soften.
  5. Stir in the halved cherry tomatoes and sliced mushrooms, cooking for another 5 minutes until the mushrooms have released their moisture.
  6. Add the tomato paste, vegetable broth, dried oregano, paprika, salt, and black pepper to the skillet. Mix well and bring to a simmer, cooking for an additional 5 minutes.
  7. Transfer the mixture to a baking dish and cover it with aluminum foil.
  8. Bake in the preheated oven for 15 minutes.
  9. Remove from the oven, stir, and drizzle with lemon juice and chopped fresh parsley before serving.
