- King oyster mushrooms - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Cherry tomatoes - 200 grams, halved
- Tomato paste - 2 tablespoons
- Vegetable broth - 200 milliliters
- Dried oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- Clean the king oyster mushrooms and slice them into bite-sized pieces.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the skillet, cooking for about 5 minutes until they begin to soften.
- Stir in the halved cherry tomatoes and sliced mushrooms, cooking for another 5 minutes until the mushrooms have released their moisture.
- Add the tomato paste, vegetable broth, dried oregano, paprika, salt, and black pepper to the skillet. Mix well and bring to a simmer, cooking for an additional 5 minutes.
- Transfer the mixture to a baking dish and cover it with aluminum foil.
- Bake in the preheated oven for 15 minutes.
- Remove from the oven, stir, and drizzle with lemon juice and chopped fresh parsley before serving.
