Ingredients

  • Fine bulgur - 100 grams
  • Boiling water - 200 ml
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Tomato - 1 medium, finely diced
  • Cucumber - 1 small, finely diced
  • Red onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Pomegranate molasses - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine the fine bulgur and boiling water. Cover and let it sit for about 10 minutes until the bulgur absorbs the water and becomes tender.
  2. Fluff the bulgur with a fork and let it cool slightly.
  3. Add the chopped parsley, mint, diced tomato, cucumber, and red onion to the bulgur.
  4. In a small bowl, whisk together the olive oil, lemon juice, pomegranate molasses, salt, black pepper, and paprika.
  5. Pour the dressing over the bulgur mixture and toss gently to combine all ingredients evenly.
