Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Fresh spinach - 100 grams, chopped
  • Mushrooms - 100 grams, sliced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Nutritional yeast - 2 tablespoons (optional)
  • Lemon juice - 1 tablespoon
  • Sunflower oil - for cooking

Steps

  1. In a mixing bowl, combine the flour and salt. Gradually add water and 2 tablespoons of olive oil, mixing until a dough forms. Knead for about 5 minutes until smooth. Cover and let it rest for 15 minutes.
  2. In a skillet, heat 1 tablespoon of sunflower oil over medium heat. Sauté the chopped onion and minced garlic until translucent. Add the sliced mushrooms and cook until tender, about 5 minutes.
  3. Stir in the chopped spinach, black pepper, cumin, and nutritional yeast (if using). Cook until the spinach is wilted and moisture has evaporated, about 3 minutes. Remove from heat and stir in the lemon juice. Allow the filling to cool slightly.
  4. Divide the rested dough into 2 equal balls. On a floured surface, roll each ball into a thin circle (about 25 cm in diameter).
  5. Place half of the filling on one side of each dough circle, leaving a margin around the edges. Fold the other half over the filling to create a half-moon shape. Press the edges to seal tightly.
  6. In a clean skillet, heat 1 tablespoon of sunflower oil over medium heat. Cook each gözleme for about 4-5 minutes on each side until golden brown and crispy. Add more oil if necessary.
  7. Remove from the skillet and let cool slightly before slicing. Serve warm.
