- Fresh parsley - 2 tablespoons, chopped
- Black pepper - 1 teaspoon
- Salt - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Nori sheets - 2, cut into strips
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine diced eggplant, zucchini, red bell pepper, and cherry tomatoes.
- Add minced garlic, olive oil, lemon juice, chopped parsley, black pepper, salt, and smoked paprika to the vegetables and toss until well coated.
- Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
- Once the vegetables are done, remove them from the oven and let cool for a few minutes.
- On a serving plate, layer the baked vegetables and place the nori strips on top to mimic the look of squid.
