Vegan Beyti

Vegan Beyti is a flavorful Turkish BBQ dish made with spiced lentils and vegetables wrapped in flatbread, then grilled to perfection. It is served with a rich tomato sauce and a side of tangy yogurt, providing a delightful plant-based twist on a beloved classic.

Ingredients

  • Red lentils - 100 grams
  • Cooked brown rice - 50 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Flatbreads (lavash or pita) - 2
  • Tomato sauce - 100 grams
  • Vegan yogurt - 100 grams

Steps

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a pot, combine the lentils with 300 ml of water and bring to a boil. Reduce heat and simmer for 15-20 minutes until soft.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 5 minutes.
  4. Add the diced red bell pepper to the skillet and cook for another 3-4 minutes until softened.
  5. Drain any excess water from the cooked lentils and add them to the skillet along with the cooked brown rice, parsley, cumin, smoked paprika, salt, and black pepper. Mix well and cook for another 5 minutes, stirring occasionally.
  6. Remove the mixture from heat and let it cool slightly. Then, divide the mixture between the two flatbreads and roll them into tight wraps.
  7. Preheat a grill or grill pan over medium heat. Brush the outside of the wraps with the remaining olive oil.
  8. Grill the wraps for about 2-3 minutes on each side until they are golden and crispy.
  9. In a small saucepan, heat the tomato sauce over low heat until warmed through.
  10. Serve the Vegan Beyti wraps drizzled with warm tomato sauce and a side of vegan yogurt.
