- Phyllo dough - 4 sheets
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, grated
- Spinach - 100 grams, chopped
- Tomato - 1 medium, diced
- Chickpeas - 100 grams, cooked and mashed
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Nutritional yeast - 2 tablespoons (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced bell pepper, and grated zucchini to the skillet. Cook for another 5 minutes until the vegetables are tender.
- Stir in the chopped spinach, diced tomato, mashed chickpeas, cumin, paprika, salt, black pepper, and fresh parsley. Cook for an additional 3-4 minutes until the spinach wilts. Remove from heat and let it cool slightly.
- On a clean surface, lay one sheet of phyllo dough and brush it lightly with olive oil. Place another sheet on top and brush it again. Repeat this with two more sheets, creating a stack of four sheets.
- Spoon half of the vegetable mixture along one edge of the phyllo stack, and roll it up tightly to form a log. Seal the ends by tucking them in.
- Place the rolled Börek on a baking sheet lined with parchment paper. Brush the top with remaining olive oil.
- Repeat the process with the remaining phyllo dough and vegetable mixture to create a second Börek.
- Bake in the preheated oven for 25 minutes or until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before slicing and serving.
