Ingredients

  • ground lamb - 300 grams
  • onion - 1 small, grated
  • garlic - 2 cloves, minced
  • red pepper flakes - 1 teaspoon
  • cumin powder - 1 teaspoon
  • sumac - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • olive oil - 1 tablespoon
  • lemon - 1, juiced
  • skewers - 4 (if using wooden, soak in water for 30 minutes)

Steps

  1. In a large mixing bowl, combine the ground lamb, grated onion, minced garlic, red pepper flakes, cumin powder, sumac, salt, black pepper, chopped parsley, olive oil, and lemon juice.
  2. Mix the ingredients thoroughly with your hands until well combined.
  3. Divide the mixture into 4 equal portions and shape each portion around a skewer, pressing firmly to ensure they hold their shape.
  4. Preheat the grill or barbecue to medium-high heat.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the kebabs are cooked through and have a nice char.
  6. Remove from the grill and let them rest for a few minutes before serving.
