- ground lamb - 300 grams
- onion - 1 small, grated

- cumin powder - 1 teaspoon
- sumac - 1 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- fresh parsley - 2 tablespoons, chopped
- olive oil - 1 tablespoon
- lemon - 1, juiced
- skewers - 4 (if using wooden, soak in water for 30 minutes)
Steps
- In a large mixing bowl, combine the ground lamb, grated onion, minced garlic, red pepper flakes, cumin powder, sumac, salt, black pepper, chopped parsley, olive oil, and lemon juice.
- Mix the ingredients thoroughly with your hands until well combined.
- Divide the mixture into 4 equal portions and shape each portion around a skewer, pressing firmly to ensure they hold their shape.
- Preheat the grill or barbecue to medium-high heat.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the kebabs are cooked through and have a nice char.
- Remove from the grill and let them rest for a few minutes before serving.
