Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Red bell pepper - 1 large, chopped
  • Green bell pepper - 1 large, chopped
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Tomato - 1 large, diced
  • Carrot - 1 medium, sliced
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Water - 200 milliliters
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine the cubed lamb, chopped bell peppers, onion, garlic, tomato, carrot, olive oil, paprika, cumin, salt, and black pepper. Mix well to coat the meat and vegetables with the spices.
  3. Transfer the mixture into a clay pot or a sturdy oven-safe dish and add the water. Stir to combine.
  4. Cover the pot tightly with a lid or aluminum foil to ensure steam does not escape.
  5. Place the pot in the preheated oven and cook for 1.5 hours, or until the lamb is tender and the flavors have melded.
  6. Remove the pot from the oven and let it sit for 10 minutes before serving.
  7. Garnish with fresh parsley and serve hot with pita bread or rice.
