Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 milliliters
  • Active dry yeast - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 milliliters
  • Ground lamb or beef - 200 grams
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic, minced - 2 cloves
  • Tomato paste - 1 tablespoon
  • Bell pepper, finely chopped - 1/2 (about 50 grams)
  • Parsley, chopped - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Butter - 30 grams

Steps

  1. In a bowl, mix the warm water, yeast, and a pinch of sugar. Let it sit for about 5 minutes until frothy.
  2. In a separate large bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover, and let it rise for 30 minutes in a warm place.
  4. While the dough is rising, heat a skillet over medium heat and add the chopped onion and minced garlic. Sauté for 3-4 minutes until soft.
  5. Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon. Stir in the tomato paste, bell pepper, parsley, black pepper, and cumin. Cook for another 5 minutes. Remove from heat.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape about 1 cm thick.
  8. Place the rolled dough onto a baking sheet lined with parchment paper. Spoon the meat mixture along the center of each oval, leaving room on the edges.
  9. Fold the sides of the dough over the filling to create a boat shape and pinch the ends to seal.
  10. Melt the butter and brush it over the top of the pide. Bake in the preheated oven for 15-20 minutes until the edges are golden brown.
  11. Remove from the oven, let it cool slightly, and slice before serving.
