Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 milliliters
- Active dry yeast - 5 grams
- Salt - 5 grams
- Olive oil - 15 milliliters
- Ground lamb or beef - 200 grams
- Onion, finely chopped - 1 medium (about 100 grams)
- Garlic, minced - 2 cloves
- Tomato paste - 1 tablespoon
- Bell pepper, finely chopped - 1/2 (about 50 grams)
- Parsley, chopped - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Butter - 30 grams
Steps
- In a bowl, mix the warm water, yeast, and a pinch of sugar. Let it sit for about 5 minutes until frothy.
- In a separate large bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover, and let it rise for 30 minutes in a warm place.
- While the dough is rising, heat a skillet over medium heat and add the chopped onion and minced garlic. Sauté for 3-4 minutes until soft.
- Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon. Stir in the tomato paste, bell pepper, parsley, black pepper, and cumin. Cook for another 5 minutes. Remove from heat.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape about 1 cm thick.
- Place the rolled dough onto a baking sheet lined with parchment paper. Spoon the meat mixture along the center of each oval, leaving room on the edges.
- Fold the sides of the dough over the filling to create a boat shape and pinch the ends to seal.
- Melt the butter and brush it over the top of the pide. Bake in the preheated oven for 15-20 minutes until the edges are golden brown.
- Remove from the oven, let it cool slightly, and slice before serving.
