- Cumin powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced carrot and minced garlic to the pot, cooking for another 3-4 minutes until softened.
- Stir in the tomato paste and cumin powder, cooking for an additional 2 minutes to incorporate the flavors.
- Add the cooked chickpeas and water to the pot, bringing the mixture to a gentle boil.
- Once boiling, reduce the heat and let it simmer for about 15 minutes. Stir occasionally.
- Season with salt, black pepper, and lemon juice. Adjust to taste.
- Using an immersion blender, blend the soup to your desired consistency, either smooth or slightly chunky.
- Serve hot, garnished with fresh parsley.
