Steps
- Wash the green beans under cold water and trim the ends.
- Bring a pot of salted water to a boil and blanch the green beans for about 3-4 minutes until bright green and tender-crisp.
- Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 5 minutes.
- Once cooled, drain the green beans again and pat them dry with a paper towel.
- In a large mixing bowl, combine the cooled green beans, chopped cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create a dressing.
