Ingredients

  • Green beans - 200 grams
  • Cherry tomatoes - 100 grams
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash the green beans under cold water and trim the ends.
  2. Bring a pot of salted water to a boil and blanch the green beans for about 3-4 minutes until bright green and tender-crisp.
  3. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 5 minutes.
  4. Once cooled, drain the green beans again and pat them dry with a paper towel.
  5. In a large mixing bowl, combine the cooled green beans, chopped cherry tomatoes, red onion, and parsley.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create a dressing.
  7. Pour the dressing over the salad and toss gently to combine all the ingredients.
