Ingredients

  • Long-grain rice - 150 grams
  • Fresh green beans - 200 grams, trimmed and cut into 2 cm pieces
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in warm water for about 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced tomato to the pot and cook for another 3-4 minutes until it softens.
  5. Add the fresh green beans and sauté for 5 minutes, stirring occasionally.
  6. Drain the soaked rice and add it to the pot, stirring to combine with the vegetables.
  7. Pour in the vegetable broth, and season with salt, black pepper, and paprika. Bring to a boil.
  8. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  9. Remove from heat and let it sit, covered, for another 5 minutes to steam.
  10. Fluff the rice with a fork, garnish with chopped parsley, and serve warm.
