- Long-grain rice - 150 grams
- Fresh green beans - 200 grams, trimmed and cut into 2 cm pieces
- Olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Vegetable broth - 400 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in warm water for about 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced tomato to the pot and cook for another 3-4 minutes until it softens.
- Add the fresh green beans and sauté for 5 minutes, stirring occasionally.
- Drain the soaked rice and add it to the pot, stirring to combine with the vegetables.
- Pour in the vegetable broth, and season with salt, black pepper, and paprika. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for another 5 minutes to steam.
- Fluff the rice with a fork, garnish with chopped parsley, and serve warm.
