  • Tomatoes - 2 medium, diced
  • Red bell pepper - 1 medium, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 250 milliliters
  • Chickpeas - 100 grams, cooked

Steps

  1. Wash the fresh green beans and trim the ends, then set aside.
  2. In a medium saucepan, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  5. Add the diced tomatoes and red bell pepper to the pan, cooking for about 5-7 minutes until the vegetables soften.
  6. Season with salt and black pepper, then add the green beans and stir well to coat.
  7. Pour in the water and bring the mixture to a boil.
  8. Reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes until the green beans are tender.
  9. Stir in the cooked chickpeas during the last 5 minutes of cooking to heat them through.
  10. Serve warm, optionally garnished with fresh parsley.
