  • Semolina - 50 grams
  • Butter - 20 grams
  • Milk - 50 milliliters
  • Rose water - 1 teaspoon

Steps

  1. In a small saucepan, combine sugar and water. Heat over medium heat until the sugar dissolves, then add lemon juice and simmer for 5 minutes to create a simple syrup. Remove from heat and add rose water.
  2. In another pan, melt the butter over low heat. Add semolina and stir continuously until it turns golden brown, about 5-7 minutes.
  3. Gradually add the milk to the semolina mixture, stirring constantly to avoid lumps. Cook for another 2-3 minutes until thickened.
  4. Finely chop the fresh green pistachios and fold half of them into the semolina mixture.
  5. Spread the semolina mixture evenly in a small serving dish, pressing it down gently. Allow it to cool for about 10 minutes.
  6. Once cooled, drizzle the simple syrup over the top and garnish with the remaining chopped pistachios.
