Steps
- In a small saucepan, combine sugar and water. Heat over medium heat until the sugar dissolves, then add lemon juice and simmer for 5 minutes to create a simple syrup. Remove from heat and add rose water.
- In another pan, melt the butter over low heat. Add semolina and stir continuously until it turns golden brown, about 5-7 minutes.
- Gradually add the milk to the semolina mixture, stirring constantly to avoid lumps. Cook for another 2-3 minutes until thickened.
- Finely chop the fresh green pistachios and fold half of them into the semolina mixture.
- Spread the semolina mixture evenly in a small serving dish, pressing it down gently. Allow it to cool for about 10 minutes.
- Once cooled, drizzle the simple syrup over the top and garnish with the remaining chopped pistachios.
