Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Cooked chicken breast, shredded - 200 grams
  • Onion, finely chopped - 1 medium
  • Red bell pepper, diced - 1 medium
  • Tomato, diced - 1 medium
  • Garlic, minced - 2 cloves
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parsley, chopped - 2 tablespoons
  • Feta cheese, crumbled - 50 grams (optional)

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large bowl, mix flour and salt. Add the yeast mixture and olive oil, then knead until a smooth dough forms. Cover and let it rise for 30 minutes in a warm area.
  3. Preheat the oven to 220°C (428°F).
  4. In a skillet over medium heat, sauté the onions and garlic until translucent. Add red bell pepper, tomatoes, paprika, and black pepper. Cook for another 5 minutes, then stir in the shredded chicken and parsley. Mix well and remove from heat.
  5. Once the dough has risen, divide it into 2 equal portions. Roll each portion into an oval shape on a floured surface, about 1/2 cm thick.
  6. Transfer the rolled dough onto a baking sheet lined with parchment paper. Spoon the chicken mixture along the center of each oval, leaving edges for the crust.
  7. Fold the edges of the dough over the filling to create a boat shape, pinching the ends to seal.
  8. If using, sprinkle crumbled feta cheese over the chicken mixture.
  9. Bake in the preheated oven for 15-20 minutes until the crust is golden and crispy.
  10. Remove from the oven, let cool for a few minutes, then slice and serve warm.
