Ingredients

  • Chicken breast - 200 grams
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced

  • Garlic - 2 cloves, minced
  • Chicken broth - 500 ml
  • Water - 500 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Dried thyme - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Add the diced carrot and celery, cooking for another 5 minutes until softened.
  4. Cut the chicken breast into bite-sized pieces and add it to the pot, stirring until it starts to cook.
  5. Pour in the chicken broth and water, then season with salt, black pepper, and dried thyme.
  6. Bring the soup to a boil, then reduce the heat and let it simmer for about 15 minutes until the chicken is cooked through and tender.
  7. Remove the pot from heat and stir in the chopped parsley before serving.
