Ingredients
- Chicken breast - 200 grams
- Chicken broth - 500 ml
- Heavy cream - 100 ml
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cauliflower - 100 grams, riced
- Parsley - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a pot, heat olive oil over medium heat and sauté the chopped onion and minced garlic until fragrant and translucent.
- Add the chicken breast to the pot and cook for about 5 minutes until it starts to brown.
- Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 15 minutes or until the chicken is fully cooked.
- Remove the chicken from the pot, shred it into pieces, and return it to the pot.
- Add the riced cauliflower and simmer for another 5 minutes until the cauliflower is tender.
- Stir in the heavy cream, chopped parsley, salt, black pepper, and lemon juice. Mix well and heat through for about 2 minutes.
- Serve hot, garnished with additional parsley if desired.
