Ingredients

  • Chicken breast - 200 grams
  • Chicken broth - 500 ml
  • Heavy cream - 100 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cauliflower - 100 grams, riced
  • Parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a pot, heat olive oil over medium heat and sauté the chopped onion and minced garlic until fragrant and translucent.
  2. Add the chicken breast to the pot and cook for about 5 minutes until it starts to brown.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 15 minutes or until the chicken is fully cooked.
  4. Remove the chicken from the pot, shred it into pieces, and return it to the pot.
  5. Add the riced cauliflower and simmer for another 5 minutes until the cauliflower is tender.
  6. Stir in the heavy cream, chopped parsley, salt, black pepper, and lemon juice. Mix well and heat through for about 2 minutes.
  7. Serve hot, garnished with additional parsley if desired.
