Ingredients
- Cucumber - 1 medium, finely grated
- Garlic - 1 clove, minced
- Soaked cashews - 100 grams
- Water - 300 ml
- Lemon juice - 2 tablespoons
- Dill - 1 tablespoon, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Paprika - for garnish
Steps
- Soak the cashews in water for at least 2 hours, then drain and rinse them.
- In a blender, combine the soaked cashews and 300 ml of water, and blend until smooth and creamy.
- In a mixing bowl, combine the grated cucumber, minced garlic, lemon juice, chopped dill, olive oil, salt, and black pepper.
- Add the blended cashew mixture to the cucumber mixture and stir well until fully combined.
- Chill the soup in the refrigerator for at least 30 minutes before serving.
- Serve cold, garnished with a sprinkle of paprika.
