Ingredients

  • Cucumber - 1 medium, finely grated
  • Garlic - 1 clove, minced
  • Soaked cashews - 100 grams
  • Water - 300 ml
  • Lemon juice - 2 tablespoons
  • Dill - 1 tablespoon, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - for garnish

Steps

  1. Soak the cashews in water for at least 2 hours, then drain and rinse them.
  2. In a blender, combine the soaked cashews and 300 ml of water, and blend until smooth and creamy.
  3. In a mixing bowl, combine the grated cucumber, minced garlic, lemon juice, chopped dill, olive oil, salt, and black pepper.
  4. Add the blended cashew mixture to the cucumber mixture and stir well until fully combined.
  5. Chill the soup in the refrigerator for at least 30 minutes before serving.
  6. Serve cold, garnished with a sprinkle of paprika.
