- Walnuts - 100 grams
- Garlic - 1 clove
- Vegan yogurt - 200 grams
- Cucumber - 1 medium, grated
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Fresh dill - 1 tablespoon, chopped (optional)
- Paprika - for garnish (optional)
Steps
- In a small pan, lightly toast the walnuts over medium heat for about 5 minutes until fragrant, then let them cool.
- Once cooled, place the walnuts and garlic in a food processor and blend until finely chopped.
- Add the vegan yogurt, grated cucumber, olive oil, lemon juice, and salt to the walnut mixture and blend until smooth.
- Taste and adjust the seasoning if necessary, adding more salt or lemon juice as desired.
- Transfer the mixture to a serving bowl and chill in the refrigerator for about 10 minutes.
- Before serving, sprinkle with chopped fresh dill and paprika if desired.
