Ingredients

  • Walnuts - 100 grams
  • Garlic - 1 clove
  • Vegan yogurt - 200 grams
  • Cucumber - 1 medium, grated
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Fresh dill - 1 tablespoon, chopped (optional)
  • Paprika - for garnish (optional)

Steps

  1. In a small pan, lightly toast the walnuts over medium heat for about 5 minutes until fragrant, then let them cool.
  2. Once cooled, place the walnuts and garlic in a food processor and blend until finely chopped.
  3. Add the vegan yogurt, grated cucumber, olive oil, lemon juice, and salt to the walnut mixture and blend until smooth.
  4. Taste and adjust the seasoning if necessary, adding more salt or lemon juice as desired.
  5. Transfer the mixture to a serving bowl and chill in the refrigerator for about 10 minutes.
  6. Before serving, sprinkle with chopped fresh dill and paprika if desired.
