Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Salt - 5 grams
- Olive oil - 15 ml
- Ground beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 small, diced
- Tomato paste - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parsley - 2 tablespoons, chopped
- Egg - 1, for egg wash
- Feta cheese - 50 grams, crumbled
Steps
- In a mixing bowl, combine warm water, active dry yeast, and a pinch of sugar. Let it sit for 5-10 minutes until frothy.
- In a large bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix to form a dough.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise for 30 minutes.
- In a skillet over medium heat, sauté the chopped onion and minced garlic until translucent. Add the ground beef and cook until browned.
- Stir in the bell pepper, tomato paste, paprika, cumin, black pepper, and salt. Cook for another 5-7 minutes until the vegetables are soft. Remove from heat and stir in chopped parsley and crumbled feta cheese.
- Preheat the oven to 220°C (428°F).
- Roll out the dough into two oval shapes about 1 cm thick. Place them on a baking sheet lined with parchment paper.
- Spoon the beef mixture onto the center of each dough oval, leaving a border around the edges. Fold the edges over to create a boat shape.
- Beat the egg and brush it over the edges of the pide for a golden finish.
- Bake in the preheated oven for 15-20 minutes until the crust is golden and crispy. Serve hot.
