Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Ground beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 small, diced
  • Tomato paste - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parsley - 2 tablespoons, chopped
  • Egg - 1, for egg wash
  • Feta cheese - 50 grams, crumbled

Steps

  1. In a mixing bowl, combine warm water, active dry yeast, and a pinch of sugar. Let it sit for 5-10 minutes until frothy.
  2. In a large bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix to form a dough.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise for 30 minutes.
  4. In a skillet over medium heat, sauté the chopped onion and minced garlic until translucent. Add the ground beef and cook until browned.
  5. Stir in the bell pepper, tomato paste, paprika, cumin, black pepper, and salt. Cook for another 5-7 minutes until the vegetables are soft. Remove from heat and stir in chopped parsley and crumbled feta cheese.
  6. Preheat the oven to 220°C (428°F).
  7. Roll out the dough into two oval shapes about 1 cm thick. Place them on a baking sheet lined with parchment paper.
  8. Spoon the beef mixture onto the center of each dough oval, leaving a border around the edges. Fold the edges over to create a boat shape.
  9. Beat the egg and brush it over the edges of the pide for a golden finish.
  10. Bake in the preheated oven for 15-20 minutes until the crust is golden and crispy. Serve hot.
