Ingredients

  • Lamb shoulder - 500 grams, cubed
  • Greek yogurt - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, grated
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pita bread - 2 pieces
  • Tomato - 1, sliced
  • Cucumber - 1, sliced

Steps

  1. In a large bowl, combine Greek yogurt, olive oil, minced garlic, grated onion, paprika, cumin, salt, and black pepper to make the marinade.
  2. Add the cubed lamb shoulder to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for the best flavor.
  3. Preheat your oven to 200°C (400°F).
  4. Thread the marinated lamb onto skewers, leaving a little space between each piece.
  5. Place the skewers on a baking tray lined with parchment paper and bake in the preheated oven for 25-30 minutes, turning halfway through, until the lamb is cooked through and slightly charred.
  6. While the lamb is cooking, warm the pita bread in a pan or oven until soft.
  7. Serve the lamb skewers with warm pita, sliced tomatoes, cucumbers, and a sprinkle of fresh parsley on top.
