Ingredients

  • Phyllo dough - 200 grams (about 10 sheets)
  • Fresh spinach - 150 grams, chopped
  • Feta cheese - 100 grams, crumbled
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, cooking until softened, about 3-4 minutes.
  3. Add the chopped spinach, salt, and black pepper to the skillet. Cook for another 2-3 minutes until the spinach is wilted. Remove from heat and let it cool slightly.
  4. In a bowl, combine the cooled spinach mixture with the crumbled feta cheese.
  5. Lay one sheet of phyllo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush with more oil.
  6. Cut the layered phyllo into 3 equal strips lengthwise. Place a tablespoon of the spinach and feta filling at one end of each strip.
  7. Fold the phyllo over the filling to form a triangle, then continue folding in a triangular pattern until you reach the end of the strip. Brush the top with olive oil and sprinkle with sesame seeds if using.
  8. Repeat the process with the remaining phyllo sheets and filling.
  9. Place the börek on a baking sheet lined with parchment paper and bake for 20 minutes or until golden brown and crispy.
  10. Allow to cool slightly before serving.
