Ingredients

  • Sweet potato - 200 grams
  • Phyllo dough - 4 sheets
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Spinach - 100 grams, fresh or frozen
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - ½ teaspoon
  • Black pepper - ¼ teaspoon
  • Nutritional yeast - 2 tablespoons
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cube the sweet potato, then steam or boil until tender, about 10-15 minutes.
  3. In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the onions until translucent, about 5 minutes. Add the garlic and cook for another minute.
  4. Add the spinach to the pan and cook until wilted (if using fresh) or heated through (if using frozen). Stir in the cumin, paprika, salt, and black pepper. Remove from heat.
  5. In a bowl, mash the cooked sweet potato and mix it with the sautéed onion and spinach. Stir in the nutritional yeast until well combined.
  6. Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again. Repeat with two more sheets for a total of four layers.
  7. Cut the layered phyllo into two equal rectangles. Place a spoonful of the sweet potato filling at one end of each rectangle and fold the sides over the filling. Roll the dough from the filled end to form a log.
  8. Place the börek on a baking sheet lined with parchment paper, seam side down. Brush the tops with remaining olive oil and sprinkle with sesame seeds.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown and crisp. Serve warm.
