Ingredients
- Basmati rice - 150g
- Chicken breast - 200g, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Chicken broth - 300ml
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Allspice - 1/4 teaspoon
- Pine nuts - 30g, toasted
- Raisins - 30g
- Fresh parsley - 1 tablespoon, chopped for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced chicken to the pot, cooking until the chicken is browned on all sides, about 5-7 minutes.
- Stir in the salt, black pepper, cinnamon, and allspice, mixing well to coat the chicken.
- Add the soaked and drained rice to the pot, stirring gently to combine with the chicken and spices.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- After 15 minutes, remove the pot from heat and let it sit, covered, for an additional 10 minutes to allow the rice to fully absorb the liquid.
- Fluff the rice with a fork, then gently fold in the toasted pine nuts and raisins.
- Serve warm, garnished with chopped parsley.
