Ingredients

  • Basmati rice - 150g
  • Chicken breast - 200g, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Chicken broth - 300ml
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/4 teaspoon
  • Pine nuts - 30g, toasted
  • Raisins - 30g
  • Fresh parsley - 1 tablespoon, chopped for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced chicken to the pot, cooking until the chicken is browned on all sides, about 5-7 minutes.
  4. Stir in the salt, black pepper, cinnamon, and allspice, mixing well to coat the chicken.
  5. Add the soaked and drained rice to the pot, stirring gently to combine with the chicken and spices.
  6. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
  7. After 15 minutes, remove the pot from heat and let it sit, covered, for an additional 10 minutes to allow the rice to fully absorb the liquid.
  8. Fluff the rice with a fork, then gently fold in the toasted pine nuts and raisins.
  9. Serve warm, garnished with chopped parsley.
