- Bell peppers (mixed colors) - 1 cup, chopped
- Red onion - 1 medium, cut into wedges
- Cherry tomatoes - 1 cup
- Skewers - 4 (soaked in water if wooden)
Steps
- In a mixing bowl, combine Greek yogurt, olive oil, minced garlic, lemon juice, paprika, cumin, salt, and black pepper to create the marinade.
- Cut the chicken breast into bite-sized cubes and add them to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 1 hour, or overnight for enhanced flavor.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto the skewers, alternating between the ingredients.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Once cooked, remove the skewers from the grill and let them rest for a couple of minutes before serving.
