Ingredients

  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bell peppers (mixed colors) - 1 cup, chopped
  • Red onion - 1 medium, cut into wedges
  • Cherry tomatoes - 1 cup
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a mixing bowl, combine Greek yogurt, olive oil, minced garlic, lemon juice, paprika, cumin, salt, and black pepper to create the marinade.
  2. Cut the chicken breast into bite-sized cubes and add them to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 1 hour, or overnight for enhanced flavor.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto the skewers, alternating between the ingredients.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Once cooked, remove the skewers from the grill and let them rest for a couple of minutes before serving.
