Ingredients

  • Sucuk (Turkish sausage) - 150 grams
  • Eggs - 4 large
  • Olive oil - 1 tablespoon
  • Tomato - 1 medium, diced
  • Green bell pepper - 1 small, diced
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Slice the sucuk into thin rounds and add to the skillet, cooking for about 3-4 minutes until browned.
  3. Add the diced tomato and green bell pepper to the skillet, stirring occasionally for another 2-3 minutes until the vegetables are softened.
  4. Make four small wells in the sucuk and vegetable mixture and crack an egg into each well.
  5. Cover the skillet and cook for about 5 minutes, or until the eggs are cooked to your liking.
  6. Season with salt and black pepper to taste.
  7. Garnish with fresh parsley before serving.
