- Sucuk (Turkish sausage) - 150 grams

- Green bell pepper - 1 small, diced

Steps
- Heat the olive oil in a non-stick skillet over medium heat.
- Slice the sucuk into thin rounds and add to the skillet, cooking for about 3-4 minutes until browned.
- Add the diced tomato and green bell pepper to the skillet, stirring occasionally for another 2-3 minutes until the vegetables are softened.
- Make four small wells in the sucuk and vegetable mixture and crack an egg into each well.
- Cover the skillet and cook for about 5 minutes, or until the eggs are cooked to your liking.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley before serving.
