Ingredients

  • Almond flour - 150 grams
  • Psyllium husk - 10 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Egg - 1 large
  • Mozzarella cheese - 150 grams, shredded
  • Cream cheese - 50 grams, softened
  • Fresh spinach - 200 grams, chopped
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, psyllium husk, baking powder, and salt.
  3. In a separate bowl, mix the egg, shredded mozzarella, and softened cream cheese until well combined.
  4. Add the dry ingredients to the wet mixture and stir until a dough forms.
  5. In a skillet, heat olive oil over medium heat, then add the chopped spinach and sauté until wilted. Season with black pepper.
  6. Once the spinach has cooled slightly, mix it with the crumbled feta cheese.
  7. Divide the dough into two equal portions and flatten each portion into a circle on parchment paper.
  8. Place the spinach and feta mixture in the center of each circle, then fold the dough over to create a pocket, sealing the edges.
  9. Transfer the çörek to a baking sheet lined with parchment paper.
  10. Bake in the preheated oven for 25-30 minutes, or until golden brown.
  11. Remove from the oven and let cool slightly before serving.
