- Egg - 1 large
- Mozzarella cheese - 150 grams, shredded
- Cream cheese - 50 grams, softened
- Fresh spinach - 200 grams, chopped
- Feta cheese - 50 grams, crumbled
- Olive oil - 1 tablespoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the almond flour, psyllium husk, baking powder, and salt.
- In a separate bowl, mix the egg, shredded mozzarella, and softened cream cheese until well combined.
- Add the dry ingredients to the wet mixture and stir until a dough forms.
- In a skillet, heat olive oil over medium heat, then add the chopped spinach and sauté until wilted. Season with black pepper.
- Once the spinach has cooled slightly, mix it with the crumbled feta cheese.
- Divide the dough into two equal portions and flatten each portion into a circle on parchment paper.
- Place the spinach and feta mixture in the center of each circle, then fold the dough over to create a pocket, sealing the edges.
- Transfer the çörek to a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
- Remove from the oven and let cool slightly before serving.
