Ingredients

  • Pasta (any shape) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomatoes - 2 large, chopped
  • Red bell pepper - 1 medium, diced
  • Chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 200 ml

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large frying pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chopped tomatoes and diced red bell pepper to the pan. Cook for about 10 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens.
  5. Season the sauce with chili flakes, salt, and black pepper. Pour in the vegetable broth and let it simmer for another 5 minutes.
  6. Add the cooked pasta to the sauce and mix well to coat the pasta evenly.
  7. Remove from heat, garnish with fresh parsley, and serve hot.
