- Pasta (any shape) - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomatoes - 2 large, chopped
- Red bell pepper - 1 medium, diced
- Chili flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Vegetable broth - 200 ml
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large frying pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped tomatoes and diced red bell pepper to the pan. Cook for about 10 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens.
- Season the sauce with chili flakes, salt, and black pepper. Pour in the vegetable broth and let it simmer for another 5 minutes.
- Add the cooked pasta to the sauce and mix well to coat the pasta evenly.
- Remove from heat, garnish with fresh parsley, and serve hot.
