Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 1 tablespoon
  • Zucchini - 100 grams, grated
  • Red bell pepper - 50 grams, diced
  • Mushrooms - 100 grams, sliced
  • Red onion - 50 grams, thinly sliced
  • Spinach - 50 grams, chopped
  • Tomato paste - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
  2. In a large bowl, combine flour and salt. Make a well in the center, add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise for 30 minutes.
  4. While the dough rises, prepare the topping. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the red onion and sauté until translucent.
  5. Add the zucchini, bell pepper, and mushrooms to the skillet. Cook for 5-7 minutes until softened. Stir in the spinach, tomato paste, paprika, cumin, and black pepper. Cook for another 2-3 minutes until the spinach wilts. Remove from heat and stir in parsley and lemon juice.
  6. Preheat your oven to 220°C (425°F).
  7. Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape, about 1 cm thick.
  8. Transfer the rolled dough onto a baking sheet lined with parchment paper. Spread the vegetable topping evenly over each pide base.
  9. Bake in the preheated oven for 15-18 minutes, or until the edges are golden brown.
  10. Remove from the oven, let cool for a few minutes, then slice and serve.
