Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Sugar - 10 grams
  • Salt - 5 grams
  • Sesame seeds - 50 grams
  • Tahini - 50 grams
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon

Steps

  1. In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
  6. Once the dough has risen, punch it down and divide it into 4 equal parts. Roll each part into a long rope and form a ring, pinching the ends to seal.
  7. In a shallow bowl, mix tahini with lemon juice, adding water if necessary to achieve a drizzleable consistency.
  8. Dip each simit into the tahini mixture and then roll it in sesame seeds to coat thoroughly.
  9. Place the coated simit on the prepared baking sheet and bake for 15-20 minutes until golden brown.
