- Active dry yeast - 7 grams
- Sugar - 10 grams
- Salt - 5 grams
- Sesame seeds - 50 grams
- Tahini - 50 grams
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
Steps
- In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
- Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
- Once the dough has risen, punch it down and divide it into 4 equal parts. Roll each part into a long rope and form a ring, pinching the ends to seal.
- In a shallow bowl, mix tahini with lemon juice, adding water if necessary to achieve a drizzleable consistency.
- Dip each simit into the tahini mixture and then roll it in sesame seeds to coat thoroughly.
- Place the coated simit on the prepared baking sheet and bake for 15-20 minutes until golden brown.
