Ingredients
- all-purpose flour - 250 grams
- warm water - 150 ml
- active dry yeast - 7 grams
- granulated sugar - 10 grams
- salt - 5 grams
- olive oil - 15 ml
- sesame seeds - 50 grams
- poppy seeds (optional) - 10 grams
- molasses - 30 ml
Steps
- In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
- In a large bowl, mix the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Stir until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes until doubled in size.
- Preheat the oven to 220°C (425°F) and line a baking tray with parchment paper.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a long rope and form a circle, pinching the ends together.
- In a shallow bowl, mix the molasses with 60 ml of water. Dip each formed simit into the molasses mixture, then roll in sesame seeds to coat.
- Place the coated simit on the prepared baking tray and let them rest for another 10 minutes.
- Bake in the preheated oven for 15-20 minutes until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
