- All-purpose flour - 250g
- Warm water - 150ml
- Active dry yeast - 7g
- Salt - 5g
- Sugar - 10g
- Olive oil - 15ml
- Sesame seeds - 50g
- Feta cheese - 100g
- Mozzarella cheese - 100g
- Egg - 1 (for egg wash)
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, and mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover it with a damp cloth, and let it rise for 30 minutes or until doubled in size.
- Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
- Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a long rope, then shape it into a ring, twisting the ends together to seal.
- In a shallow dish, place sesame seeds. Dip each ring in water, then coat with sesame seeds.
- Place the rings on the prepared baking sheet and let them rest for 10 minutes.
- In a bowl, crumble feta and mozzarella cheese together. Fill each simit ring with the cheese mixture.
- Beat the egg and brush the top of each simit with the egg wash for a shiny finish.
- Bake in the preheated oven for 15-20 minutes until golden brown. Serve warm.
