  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Chickpeas - 200 grams, canned and drained
  • Feta cheese - 100 grams, crumbled

  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F). Cut the simit bread into bite-sized pieces and spread them on a baking sheet.
  2. Bake the simit pieces in the preheated oven for about 10 minutes or until they are crispy and golden brown.
  3. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, chickpeas, feta cheese, and chopped parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
  5. Once the simit pieces are done baking, let them cool slightly before adding them to the salad mixture.
  6. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  7. Serve immediately, or let it chill in the refrigerator for 10-15 minutes for the flavors to meld.
