  • Vegetable broth - 300 ml
  • Dried mint - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until softened.
  4. Add the diced tomato and cook for 2-3 minutes until the mixture is well combined.
  5. Stir in the bulgur wheat, dried mint, cumin, salt, and black pepper, mixing well to coat the bulgur with the spices.
  6. Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
  7. Simmer for about 15 minutes or until the bulgur is tender and the liquid is absorbed.
  8. Remove from heat and let it sit, covered, for 5 minutes.
  9. Fluff the pilaf with a fork, stir in the chopped parsley and lemon juice before serving.
