- Dried mint - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until softened.
- Add the diced tomato and cook for 2-3 minutes until the mixture is well combined.
- Stir in the bulgur wheat, dried mint, cumin, salt, and black pepper, mixing well to coat the bulgur with the spices.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
- Simmer for about 15 minutes or until the bulgur is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the pilaf with a fork, stir in the chopped parsley and lemon juice before serving.
