Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Sesame seeds - 50 grams
  • Olive oil - 2 tablespoons
  • Tomato - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Zucchini - 50 grams, diced
  • Red onion - 50 grams, thinly sliced
  • Black olives - 30 grams, sliced
  • Fresh parsley - 10 grams, chopped
  • Dried oregano - 1 teaspoon
  • Black pepper - to taste

Steps

  1. In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Once the yeast mixture is ready, add it to the flour along with olive oil.
  3. Knead the dough for about 5-7 minutes until smooth. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
  4. Preheat your oven to 220°C (428°F).
  5. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into an oval shape, about 1 cm thick.
  6. In a bowl, mix the diced tomato, red bell pepper, zucchini, red onion, black olives, parsley, dried oregano, and black pepper.
  7. Spread the vegetable mixture evenly over each rolled-out dough, leaving a small border around the edges.
  8. Sprinkle sesame seeds over the edges of the dough.
  9. Transfer the pide to a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
  10. Remove from the oven, let cool slightly, slice, and serve warm.
