- Simit bread - 2 pieces
- Canned chickpeas - 240 grams, drained and rinsed
- Breadcrumbs - 50 grams
- Red onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
- Yogurt - 100 grams
- Lemon juice - 1 tablespoon
Steps
- In a mixing bowl, mash the drained chickpeas with a fork until mostly smooth, leaving some texture.
- Add the breadcrumbs, chopped red onion, minced garlic, parsley, cumin, paprika, salt, and pepper to the bowl. Mix until well combined.
- Shape the mixture into two equal patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and crispy.
- While the patties are cooking, prepare the yogurt sauce by mixing the yogurt, lemon juice, and a pinch of salt in a small bowl.
- Slice the simit bread in half and toast lightly in the skillet for about 1-2 minutes until slightly crispy.
- Assemble the burgers by placing a chickpea patty on the bottom half of each simit bread, topping with sliced tomato, cucumber, and a generous dollop of yogurt sauce.
- Close the burgers with the top half of the simit bread and serve immediately.
