Ingredients

  • Simit bread - 2 pieces
  • Canned chickpeas - 240 grams, drained and rinsed
  • Breadcrumbs - 50 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Yogurt - 100 grams
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, mash the drained chickpeas with a fork until mostly smooth, leaving some texture.
  2. Add the breadcrumbs, chopped red onion, minced garlic, parsley, cumin, paprika, salt, and pepper to the bowl. Mix until well combined.
  3. Shape the mixture into two equal patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and crispy.
  5. While the patties are cooking, prepare the yogurt sauce by mixing the yogurt, lemon juice, and a pinch of salt in a small bowl.
  6. Slice the simit bread in half and toast lightly in the skillet for about 1-2 minutes until slightly crispy.
  7. Assemble the burgers by placing a chickpea patty on the bottom half of each simit bread, topping with sliced tomato, cucumber, and a generous dollop of yogurt sauce.
  8. Close the burgers with the top half of the simit bread and serve immediately.
