Ingredients

  • All-purpose flour - 250g
  • Warm water - 150ml
  • Active dry yeast - 7g
  • Sugar - 10g
  • Salt - 5g
  • Olive oil - 15ml
  • Sesame seeds - 50g
  • Baking soda - 5g

Steps

  1. In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for 10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 10 minutes, until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
  5. Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
  6. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a long rope, then shape into a circle and pinch the ends together to form a ring.
  7. In a small bowl, mix baking soda with 250ml of warm water. Dip each ring into the baking soda solution and then coat in sesame seeds.
  8. Place the coated rings on the prepared baking sheet and let them rest for another 10 minutes.
  9. Bake in the preheated oven for 15-20 minutes until golden brown. Remove from the oven and let cool slightly before serving.
