Simit

Simit is a traditional Turkish bread, often referred to as a sesame bagel, that is crispy on the outside and chewy on the inside. This vegan version is perfect for breakfast, providing a delightful experience with each bite.

Ingredients

  • all-purpose flour - 250 grams
  • warm water - 150 ml
  • active dry yeast - 7 grams
  • sugar - 10 grams
  • salt - 5 grams
  • olive oil - 1 tablespoon
  • sesame seeds - 50 grams
  • baking soda - 1 teaspoon
  • molasses - 2 tablespoons

Steps

  1. In a bowl, mix warm water, sugar, and active dry yeast. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil, and mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  5. Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
  6. Once the dough has risen, punch it down and divide it into 4 equal pieces. Shape each piece into a ring.
  7. In a shallow bowl, mix water with baking soda and molasses. Dip each ring into the mixture, then coat with sesame seeds.
  8. Place the coated rings on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
  9. Let them cool slightly before serving. Enjoy with vegan spreads or on their own.
