Simit
Simit is a traditional Turkish bread, often referred to as a sesame bagel, that is crispy on the outside and chewy on the inside. This vegan version is perfect for breakfast, providing a delightful experience with each bite.

Ingredients
- all-purpose flour - 250 grams
- warm water - 150 ml
- active dry yeast - 7 grams
- sugar - 10 grams
- salt - 5 grams
- olive oil - 1 tablespoon
- sesame seeds - 50 grams
- baking soda - 1 teaspoon
- molasses - 2 tablespoons
Steps
- In a bowl, mix warm water, sugar, and active dry yeast. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil, and mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Shape each piece into a ring.
- In a shallow bowl, mix water with baking soda and molasses. Dip each ring into the mixture, then coat with sesame seeds.
- Place the coated rings on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
- Let them cool slightly before serving. Enjoy with vegan spreads or on their own.
