Ingredients

  • Purslane - 200 grams
  • Cherry tomatoes - 100 grams
  • Red onion - 1 small
  • Cucumber - 1 medium
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh mint - 2 tablespoons, chopped

Steps

  1. Wash the purslane thoroughly under running water and drain it.
  2. Chop the purslane into bite-sized pieces and place it in a large mixing bowl.
  3. Halve the cherry tomatoes and add them to the bowl.
  4. Finely slice the red onion and add it to the bowl.
  5. Dice the cucumber and add it to the mixture.
  6. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  7. Pour the dressing over the salad and toss gently to combine all ingredients.
  8. Sprinkle the chopped fresh mint on top and serve immediately.
