Ingredients

  • Zucchini - 2 medium-sized
  • Red bell pepper - 1 medium, diced
  • Yellow bell pepper - 1 medium, diced
  • Cherry tomatoes - 200 grams, halved
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)
  • Fresh basil - for garnish

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red and yellow bell peppers to the skillet and cook for 3-4 minutes until they begin to soften.
  4. Stir in the halved cherry tomatoes, dried oregano, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes start to break down.
  5. Add the zucchini noodles to the skillet and toss everything together. Cook for another 3-5 minutes until the zucchini is tender but still slightly crisp.
  6. Remove from heat and serve warm, garnished with grated Parmesan cheese and fresh basil if desired.
