- Vegetable broth - 250 ml
- Tomato paste - 1 tablespoon
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Stir in the diced carrot, zucchini, and bell pepper; cook for about 5-7 minutes until the vegetables are tender.
- Add the cauliflower rice to the skillet, mixing well with the sautéed vegetables.
- Pour in the vegetable broth and stir in the tomato paste, dried thyme, salt, and black pepper.
- Bring the mixture to a simmer, cover, and let it cook for about 10-12 minutes, until the cauliflower rice is tender.
- Remove from heat and fold in the chopped fresh parsley before serving.
