  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Tomato paste - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the diced carrot, zucchini, and bell pepper; cook for about 5-7 minutes until the vegetables are tender.
  4. Add the cauliflower rice to the skillet, mixing well with the sautéed vegetables.
  5. Pour in the vegetable broth and stir in the tomato paste, dried thyme, salt, and black pepper.
