Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Mushrooms - 100 grams, sliced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil.
  3. Mix until the dough comes together, then knead on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until it doubles in size.
  5. While the dough is rising, prepare the vegetable filling: heat a tablespoon of olive oil in a pan over medium heat, add the onion and garlic, and sauté until translucent.
  6. Add the red bell pepper, zucchini, and mushrooms to the pan, cooking for about 5-7 minutes until the vegetables are tender.
  7. Stir in the diced tomato, black pepper, paprika, and chopped parsley. Cook for another 2-3 minutes, then remove from heat and let cool slightly.
  8. Preheat your oven to 220°C (428°F).
  9. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into an oval shape on a floured surface.
  10. Place the rolled dough on a baking sheet lined with parchment paper. Spoon the vegetable filling onto the center of each oval, leaving a border around the edges.
  11. Fold the edges of the dough over the filling to create a boat shape, pinching the ends to seal.
  12. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  13. Remove from the oven and allow to cool slightly before slicing. Serve warm.
