- Zucchini - 1 small, diced
- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced zucchini, red bell pepper, and carrot to the skillet. Sauté for 5-7 minutes until the vegetables are tender.

- Season the vegetable mixture with dried oregano, salt, and black pepper. Add the cooked pasta to the skillet and toss everything together.
- Drizzle with lemon juice and mix well. Cook for an additional 1-2 minutes to heat through.
- Serve hot, garnished with chopped fresh parsley.
