  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Eggplant - 100 grams, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the cubed lamb shoulder to the skillet and cook until browned on all sides.
  4. Stir in the tomato paste, dried oregano, salt, and black pepper, mixing well.
  5. Add the diced zucchini, red bell pepper, and eggplant to the skillet, stirring to combine.
  6. Reduce the heat to low, cover, and let it simmer for about 30 minutes or until the lamb is tender.
  7. Check occasionally and add a splash of water if necessary to prevent sticking.
  8. Once cooked, remove from heat and let it rest for a few minutes.
  9. Serve hot, garnished with fresh parsley.
