Ingredients

  • Large potatoes - 2
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Carrot - 1, grated
  • Zucchini - 1, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Chopped fresh parsley - 2 tablespoons
  • Corn - 100 grams (canned or frozen)
  • Lemon - 1, juiced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them with a fork several times.
  3. Wrap the potatoes in aluminum foil and bake in the preheated oven for about 45 minutes, or until tender.
  4. While the potatoes are baking, heat the olive oil in a skillet over medium heat.
  5. Add the minced garlic, diced red and green bell peppers, grated carrot, and diced zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are softened.
  6. Stir in the corn, salt, black pepper, paprika, and lemon juice, mixing well. Cook for an additional 3-4 minutes.
  7. Remove the baked potatoes from the oven and carefully unwrap them. Cut a lengthwise slit in each potato and gently fluff the insides with a fork.
  8. Spoon the vegetable mixture into each potato, topping with chopped fresh parsley.
  9. Serve warm and enjoy your Sebzeli Kumpir!
