- Large potatoes - 2
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Carrot - 1, grated
- Zucchini - 1, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Chopped fresh parsley - 2 tablespoons
- Corn - 100 grams (canned or frozen)
- Lemon - 1, juiced
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them with a fork several times.
- Wrap the potatoes in aluminum foil and bake in the preheated oven for about 45 minutes, or until tender.
- While the potatoes are baking, heat the olive oil in a skillet over medium heat.
- Add the minced garlic, diced red and green bell peppers, grated carrot, and diced zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are softened.
- Stir in the corn, salt, black pepper, paprika, and lemon juice, mixing well. Cook for an additional 3-4 minutes.
- Remove the baked potatoes from the oven and carefully unwrap them. Cut a lengthwise slit in each potato and gently fluff the insides with a fork.
- Spoon the vegetable mixture into each potato, topping with chopped fresh parsley.
