- Fine bulgur - 100 grams
- Boiling water - 150 milliliters
- Olive oil - 2 tablespoons
- Tomato - 1 medium, finely chopped
- Cucumber - 1 small, finely chopped
- Red bell pepper - 1 small, finely chopped
- Green onion - 2, finely sliced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pine nuts - 30 grams, toasted (optional)
- Paprika - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, combine the fine bulgur with boiling water. Cover and let it sit for about 10 minutes until the bulgur absorbs the water and softens.
- Once the bulgur is ready, fluff it with a fork and add olive oil, chopped tomatoes, cucumber, red bell pepper, green onion, parsley, and mint.
- Stir in the lemon juice, salt, black pepper, paprika, and toasted pine nuts if using. Mix everything well until evenly combined.
- Transfer the mixture into a greased baking dish and spread it evenly.
- Bake in the preheated oven for 25-30 minutes until the top is slightly golden.
- Remove from the oven, let it cool slightly, and serve warm or at room temperature.
