Ingredients

  • Fine bulgur - 100 grams
  • Boiling water - 150 milliliters
  • Olive oil - 2 tablespoons
  • Tomato - 1 medium, finely chopped
  • Cucumber - 1 small, finely chopped
  • Red bell pepper - 1 small, finely chopped
  • Green onion - 2, finely sliced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pine nuts - 30 grams, toasted (optional)
  • Paprika - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine the fine bulgur with boiling water. Cover and let it sit for about 10 minutes until the bulgur absorbs the water and softens.
  3. Once the bulgur is ready, fluff it with a fork and add olive oil, chopped tomatoes, cucumber, red bell pepper, green onion, parsley, and mint.
  4. Stir in the lemon juice, salt, black pepper, paprika, and toasted pine nuts if using. Mix everything well until evenly combined.
  5. Transfer the mixture into a greased baking dish and spread it evenly.
  6. Bake in the preheated oven for 25-30 minutes until the top is slightly golden.
  7. Remove from the oven, let it cool slightly, and serve warm or at room temperature.
