Ingredients

  • Yufka (Turkish pastry sheets) - 4 sheets
  • Spinach - 100 grams, chopped
  • Zucchini - 100 grams, grated
  • Carrot - 50 grams, grated
  • Onion - 1 small, finely chopped
  • Feta cheese - 100 grams, crumbled
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/4 teaspoon
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the grated zucchini and carrot to the skillet and cook for another 5 minutes until softened.
  4. Stir in the chopped spinach and cook until wilted, about 2 minutes. Season with salt, black pepper, and paprika. Remove from heat and let cool slightly.
  5. Once cooled, mix in the crumbled feta cheese until well combined.
  6. Lay one yufka sheet on a flat surface and brush with olive oil. Place another sheet on top and brush with more olive oil.
  7. Spoon a portion of the vegetable filling along one edge of the yufka, then fold the sides over the filling and roll it up tightly to form a cylinder. Place the rolled börek seam-side down on a baking tray.
  8. Repeat the process with the remaining yufka sheets and filling.
  9. Brush the tops of the böreks with the beaten egg for a golden finish.
  10. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
