Ingredients
- Yufka (Turkish pastry sheets) - 4 sheets
- Spinach - 100 grams, chopped
- Zucchini - 100 grams, grated
- Carrot - 50 grams, grated
- Onion - 1 small, finely chopped
- Feta cheese - 100 grams, crumbled
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
- Egg - 1, beaten (for egg wash)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the grated zucchini and carrot to the skillet and cook for another 5 minutes until softened.
- Stir in the chopped spinach and cook until wilted, about 2 minutes. Season with salt, black pepper, and paprika. Remove from heat and let cool slightly.
- Once cooled, mix in the crumbled feta cheese until well combined.
- Lay one yufka sheet on a flat surface and brush with olive oil. Place another sheet on top and brush with more olive oil.
- Spoon a portion of the vegetable filling along one edge of the yufka, then fold the sides over the filling and roll it up tightly to form a cylinder. Place the rolled börek seam-side down on a baking tray.
- Repeat the process with the remaining yufka sheets and filling.
- Brush the tops of the böreks with the beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
