- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 750 ml
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced carrot, potato, zucchini, and bell pepper, and cook for about 5-7 minutes, stirring occasionally.
- Add the diced tomato, vegetable broth, bay leaf, thyme, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the vegetables are tender.
- Remove the bay leaf and stir in the lemon juice. Adjust seasoning if needed.
- Serve hot, garnished with freshly chopped parsley.
