  • Potato - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 750 ml
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the diced carrot, potato, zucchini, and bell pepper, and cook for about 5-7 minutes, stirring occasionally.
  4. Add the diced tomato, vegetable broth, bay leaf, thyme, salt, and black pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the vegetables are tender.
  6. Remove the bay leaf and stir in the lemon juice. Adjust seasoning if needed.
  7. Serve hot, garnished with freshly chopped parsley.
