- Mushrooms - 200 grams, halved
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- In a large bowl, combine the sliced zucchini, chopped red and yellow bell peppers, onion wedges, cherry tomatoes, and halved mushrooms.
- In a separate bowl, whisk together the olive oil, lemon juice, garlic powder, paprika, cumin, salt, and black pepper.
- Pour the marinade over the vegetables and toss them well to ensure they are evenly coated. Cover and let them marinate for at least 15 minutes.
- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 10 minutes to prevent burning.
- Thread the marinated vegetables onto the skewers, alternating to create a colorful presentation.
