  • Cherry tomatoes - 200 grams
  • Mushrooms - 200 grams, halved
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. In a large bowl, combine the sliced zucchini, chopped red and yellow bell peppers, onion wedges, cherry tomatoes, and halved mushrooms.
  2. In a separate bowl, whisk together the olive oil, lemon juice, garlic powder, paprika, cumin, salt, and black pepper.
  3. Pour the marinade over the vegetables and toss them well to ensure they are evenly coated. Cover and let them marinate for at least 15 minutes.
  4. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 10 minutes to prevent burning.
  5. Thread the marinated vegetables onto the skewers, alternating to create a colorful presentation.
  6. Grill the skewers for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  7. Remove the kebabs from the grill and let them rest for a few minutes before serving.
  8. Garnish with fresh parsley and serve warm with pita bread or a side salad.
